Description
Kombu is the Japanese name for kelp and refers also to the method of preparation which dries the kelp as a strip. Kelp/Kombu is a generic name for over 300 species of large brown algae that belong to the order Laminariales. Our Kelp (Ecklonia radiata, also called North Island Kelp) is a very similar to the thinner variety of Japanese Kombu and can be used exactly the same way. It is dried naturally and the leaves are separated from the middle strips to make 2 products suited to a variety of uses. The Kombu leaves are mostly used as a wrap for marinating or as a vegetable.
